Luxury Chocolate Croissant Pudding

You can either use stale croissants, or buy frozen croissants and bake them specifically for this dessert.

  • 12 croissants, cut or torn into 3 pieces, put into a baking dish. It’s your choice whether your dish is small and deep, or shallow and wide. But don’t go too shallow – this is a luxurious dessert!
  • 50g (or more!) of chocolate – dark, milk or white chocolate all work well – chopped into chunks and tucked in amongst the croissant pieces
  • 50g dark chocolate – either grated by hand or finely chopped in a food processor
  • 350ml milk
  • 200ml double cream
  • 2 eggs, lightly whisked
  • 100g sugar
  • 1t vanilla

Make a chocolate custard with the above ingredients by heating to simmering in a pan, stirring constantly.

Pour the custard over the croissants and leave to soak for about 15 minutes. Then cover with foil and bake at 180C for 15 minutes. Remove the foil and bake for about another 15 minutes until toasty on top. Keep an eye on it – if the original croissants were well cooked, they might want to go a bit too brown if you leave it in the oven too long…
